About Wheat in Kentucky

Wheat is the primary small grain in Kentucky. Soft red winter wheat (Triticum aestivum) grown in Kentucky provides flour for cookies, cakes, pastries and crackers. Hard red winter wheat is grown in the Great Plains and is used for breads. Durum wheat is grown in the Northern Great Plains and is used for pasta. White wheat is commonly grown in the Pacific Northwest and is mostly exported to Asia. Other small grains grown in the state include rye, barley, oats, triticale, and spelt, which are grown on much fewer acres. All of these small grains originated in the Fertile Crescent and wheat and barley were the primary grains for some of the earliest civilizations with recorded history. Evidence of wheat cultivation dates back 6,000 years in regions of France.
